We are making tacos. Seasoned ground beef, hard taco shells, with shredded cheese, shredded lettuce, onions. Chips and salsa.
Probably leftover corn as a small side.

What have you got at home? Further, what style of cooking are you looking at, Asian, Italian, etc?
Saag Paneer is good. Although you either have to make the paneer, find a place that sells it, or find a suitable substitute. (that's spinach and cheese for the non Indian eaters)
I'm going with leftover turkey myself. We actually cook turkey more than just thanksgiving! So I eat well.

It's Easter, in certain religions/cultures, lamb or lamp is considered a traditional Easter meal.
Lamp is a bit light for me, I'd stick with the lamb.
