Food / drink 🍗 The 'help me figure out what to have for dinner tonight' thread

You have 60 minutes to come up with a semi-healthy, quick, easy recipe to prepare for dinner. Go.
 
We are doing tacos. Wife and kids like chicken tacos, I am having beef tacos that will contain diced habanero and serrano peppers mixed in.
 
Brown the ground buffalo with peppers and onions. Mix in a bowl with hashbrowns, butter and cheese to your liking. Put all this into a 9X13 pan, greased with some butter, of course, and set it aside.

Mix milk, eggs and bisquik pancake mix in a bowl. Pour that concoction over your pan and bake for a while at 350.


It's buffalo bill's breakfast casserole......for dinner.
 
We're having stir-fry tonight. Beef with broccoli, carrots and peas, served over a bed of brown rice. I use a peanut-based sauce because we don't like soy or General Hso.
 
Grilled chicken legs last night. Half left he grill with bbq sauce & the other half was nekkid.
Add a side of steamed broccoli with cous cous & a small amount of cheese sauce. Yum.
 
I'm just cramming in some left over pizza tonight unless someone can think of another food I can eat while wearing clown makeup.
 
Ricotta, mushroom & spinach ravioli.

The Girl didn't like it because the pasta was slightly undercooked, but she said it reminded her of lasagna because of the ricotta.
 
Lord only knows tonight. We have some fish in the freezer - I think it's cod but I don't remember - and perhaps tortelinni as a side.

What veggie would you put with fish and pasta? Your choices are broccoli (steamed?), green beans or corn.

I'd go with broccoli.

I have to plan for dinner tonight because our plans changed. I am thinking soup and grill cheese sandwiches. Does any have good chicken soup recipe? I am not a fan of tomato based soups but everything else is an option.
 
Tonight I will be eating whatever FREE FOOD at our Neighborhood Round Table assembly. I am flat broke until next week's paycheck after paying off:

-Immigration fees
-My immigration lawyer's monthly fee
-My Internet bill
-Hydro (electirc and hot water) bill
-Rent
-two parking tickets

But I am getting a CHRISTMAS BONUS, woot!!!!!!
 
I am willing to admit that I suck at this whole planning/ cooking dinner with a new long commute. What did I plan for dinner tonight? Not a thing! What did I plan for dinner any day this week? An HP meeting and a Commission meeting; nothing else. I know I've got chicken wings in the freezer but my recipe takes over an hour to cook. I think I also have ground beef in the fridge.

Any suggestions for an easy meal to be welcomed by my SO (= somewhat picky eater)???

(If only I were organized on weekends. I see these people who do meal planning for the whole month. I see these easy crockpot meals that should be in ziplocks in the freezer for me to just throw in in the morning before work. ... I've failed.)

I just got an electric pressure cooker for my birthday. I didn't think I'd use it. I have used it a dozen times in the last 2.5 weeks. It speeds things up when you don't remember to put things in the crockpot.

I've been making soup on Sundays and freezing portions of it to eat during the week.
 
We did falafels and couscous last night. What about tonight? I'm desperate for suggestions.
 
For the record, taco pie is ahead in the polls. But we know how unreliable polls can be......
 
The chili was excellent last night & was perfect for the colder evening.



Well not as cold as if we lived in the Midwest, but we don't live in the Midwest.
 
Taco pie got vetoed last night. We did plain ol' tacos instead :)
 
So Mrs. Maister will not be back until late tonight and said she will fend for herself. That leaves me figuring what to make for Junior and I. Last night we grilled hamburgers. I'm sure if I asked Junior what he'd like his response would be A) go to fast food restaurant. Where he would presumably order a hamburger again; B) variant: go to some more expensive restaurant, or if forced to eat at home opt for C) ice cream, donuts, and potato chips for dinner.

Currently I'm leaning towards C) but thought I might tap the Throbbing Brain for possible healthier suggestions before descending to that level (I note I've got frozen ravioli in the freezer along with pork chops and ground beef. Also got plenty of canned goods and there's a can or two of chick peas that could be made into chana dal).
 
Go to the store and get one of those $5 rotisserie chickens. Shred it up and use it for tacos. Easy to make, everyone makes their own, and the wife gets some when she gets home.
 
It's cold and rainy here, so I'd go for grilled cheese and soup or baked potatoes or something along those lines.
Or make your own pizzas - pick up some roll out pizza dough or the pre-made crusts and you can each top how you want.

Home made or Zatarain's? What type of sausage y'all using?

Zatarain's. I'm usining whatever sausage we've got left in the chest freezer (load up on various german sausages when we visit Frankenmuth, but it's been a while and I think all that's left are some smoked festival brats)
 
The Zatarain's was something of a letdown. Tasted kinda like it came out of a box (go figure). It was quick, however, to prepare and that counts for something on weekday evenings.

So I really don't know what to make for tonight's dinner. Will happily take suggestions for a Thursday night dinner menu. There's a 35% chance of rain this evening, so outdoor grilling may not be the best option.

Zatarains is ok and a decent introduction into the cuisine. it does pale to the real deal or the homemade stuff. I've had it with andouille and deer sausage. Cajun/creole/New Orleans styled cooking is pretty good in general.
