Today is groundhogs day... and the saying goes if he sees his shadow, and goes back into his hole, you have 6 more weeks of winter.


With a few exceptions, I think people are over winter and are calling for Phil's head. The question is, what is the best way to prepare groundhog? Grill, Stew, smoker, deep fried? What say you?
 
I bristle a little when people say groundhogs day. Grrr.

Groundhog can be pretty good to eat. They have musk glands that you have to be careful with when you dress them. Their diet is primarily greens so I find them somewhat similar to rabbit. I'll never eat possum though. Those nasty things will eat anything. When I lived on the Eastern Shore of Maryland it was not that uncommon to see muskrat on the menu at some places. I find it more gamey than rabbit or squirrel.
