Not talking about chopping cabbage finely, but rather, when guitarists exhibit solos with fast, complex, flashy passages that display multiple techniques showcasing the guitarist's skill with the instrument. The 30 second example linked above is a good example, but frequently we hear shredding during live performances, although there are plenty of recorded examples as well (Eddie VanHalen was a past master).

Who do you think can shred with the best?

lead guitarist shreds at multiple points throughout the song, but probably reaches his apex just after ~3:10
 
Anyone else play guitar themselves? I have a PRS and Epiphone Les Paul at home. I try to get down to the basement to play for at least a little bit every night. I'm not a great shredder (fast legato playing and alternate picking skills take years to develop) but I can play rhythm and lead decently enough. Once the kid is older, I'd love to get back into a band again.
 

This three-minute long video of an interview with Brian May (of Queen fame) and Tony Lommi (of Black Sabbath) about guitar riffs is worth watching in its entirety. But the coolest part, though, is when Brian May jumps in to start shredding on Paranoid with Tony (~2:24). You can tell it wasn't rehearsed because you see Brian watching/studying what chords Tony is playing when he starts for a few moments, so Brian's just jamming impromptu based on nothing more than the tonic chord. Guy's a true professional.

I play guitar. Or more accurately I played guitar. I haven't picked it up for years, but there's a Gibson J-50 (an acoustic produced locally that I got as a gift in the 1970s) gathering dust in the home office.
